Pumpkin Seed Salsa

Pumpkin Seed Salsa
Pumpkin Seed Salsa
INGREDIENTS

Pumpkin seeds (raw, unhulled) : 1 ¼ cups
Plum tomatoes : 2
Chilly pepper : 1
Coriander leaves (chopped)
Chives (chopped)
Salt (as needed)

INSTRUCTIONS

1. Heat a frying pan over medium-high heat. Add pumpkin seeds, and cook, swirling pan often, until lightly toasted, about 3 minutes. Transfer to a mixture grinder, and process until smooth, about 45 seconds; set aside.

2. Return frying pan to heat and add Plum tomatoes and chili pepper; cook, turning as needed, until charred all over, about 5 minutes for the chilly pepper, 7 minutes for the tomatoes. Transfer to mixture grinder with pumpkin seeds along with coriander leaves, chives, and salt, and grind until smooth. Transfer to a bowl.

Now it can be served with salad, chips, boiled eggs in Mexican style or if you are an Indian, you know the better combination.
